Hi there! Witamy!As the only Polak in my family, I have lately developed a longing for some good, old school Polish cooking. Living in Los Angeles since 1993 I was left with few if no options for Polish food. I left Poland as a 12 year old and as we all know flavors, smells and taste buds all activate memories from your early days. And so they have in me. Our first family trip to my home town of Krakow in 2019 woke up all of them at once. Since 1996 I have been collecting my Mom's and Dad's recipes by taking hand written notes, having them write them down or taking them over the phone. Living in the US since 1993, being married to an English gal, Polish dishes were always a mystery to me. But I have pulled out the magical notes and went to work. This is straight down Polish cooking simplified. Translated to US units form metric, or my Mom's "a pinch of that and a pinch of this" I have changed some to my liking and simplified to what is available in the stores here. But the flavors are there. I experimented on some full bloodied Polish friends that live here in California and they all approved. And keep asking for more sausages from my smoker.....
I am not a master chef, I am not a health adviser. I am just a Dad who feeds his family. And a Polak who loves our traditions. And a guy who loves to cook, smoke and BBQ. I am trying to take the deep science out of cooking, remove the French confusion, throw away fancy words. Leave behind a kick ass meal cooked with instinct.
